About this time 5 years ago, I would have had my first child home for 2 days.  After my sweet little boy was finally cleared to leave the hospital, it was time for us first-time parents to figure out exactly how this parenting thing worked.

Fast forward 5 years.

Sitting before me is an adorable, smart, tall, funny, sensitive, out-going little boy.  Guess we’re doing alright with the parenting thing. ;)

My husband thinks I went all out for Peamite Alpha’s 5th birthday, but really, I didn’t.  I had so many more ideas that I didn’t get to implement because I simply ran out of time!  (You can check out my Party Ideas board on Pinterest to see where I received a lot of  inspiration!)

To get this party started, I began with the invitation.  I found this awesome tutorial for DIY Super Mario Bros. Invitations over at Chica and Jo.

I needed 24 invitations, so I started early because I knew it would take some time to get each step done, especially since I don’t have a Cricut machine.  I didn’t have any brads or grommets for the corners, so I just glued the 3 sides down, and left the top open to slide the mushroom down into.


I realized when I attached the mushrooms to the white invitations, that I completely forgot to cut the bottom of the mushroom out on tan paper, but hey, it still looks ok. :)

Next, I brainstormed on what the cake should look like.  I found a lot of neat ideas.  Would you believe most of the ideas that I found were actually wedding cakes?  Not a groom’s cake…the actual wedding cake.  I found that interesting.

I liked this design the best, so this is how my version turned out:

For the characters, I used Carter’s favorites from this Super Mario Bros Mini Figures Set.  He loves playing with them now that all the cake is gone!  The ones that I didn’t use on the cake, I used as table decorations. [Read more...]

Strawberry Lemon Shortbread Bars

My sweet friend’s husband has a birthday today.  I think we’re friends, too, especially since I made him homemade chocolate chip cookies and then something special for his birthday today.  I really think you can gain favor with a man through food.  ha.  What do you guys think?

Last Spring I discovered this recipe while flipping though my mom’s Southern Living magazine.  I tested them out on my Bible study group, and they were a hit.  Definitely a keeper.

This friend loves anything with cream cheese, so I thought of these.  Maybe he’ll let me have a slice, but hopefully he’ll just take them home and keep them away from me since I’m trying to fit in a dress by the end of May (which, might I add, is quickly approaching!).

This dessert starts out on a shortbread crust – which I love all by itself.  You could even add some pecans to the crust for a great flavor enhancer.  The next layer is a good slathering of strawberry preserves, and then you pour delicious, creamy, lemon cream cheese mixture on top.  When it bakes up, it has the consistency of a cheesecake.  YUM!

Princess Katie’s 3rd Birthday Party

My little girl says that she’s a princess all the time, so what better party to have than a princess themed party?  She also tells me that her favorite color is pink, so at the party, pink abounded.

My husband thinks I put way too much effort into this party, but in reality, there were sooo many ideas that I just couldn’t execute, or weren’t really feasible to execute since it was just a 3 year old’s birthday party.  The important thing is, she had a wonderful time.

I cut Rice Krispie Treats into tiaras and shields.  I totally cheated ran out of time and just put a real tiara on the cake instead of making one out of gum paste.  I decided to try my hand at making cake balls, and they must of been a success, because there were none left!

I made the goody bags by embellishing small canvas bags that I bought at Michael’s Craft Store.  I cut felt into tiara and shield shapes and glued them to the bags with felt glue.  I glued jewels onto the tiaras and painted a red cross on the shields. [Read more...]

Lunch was so delicious, I couldn’t wait to share it with you.  I’ve been trying to add more fruits and veggies to my meals, and this recipe is the perfect way to do it.

It’s loaded with apples, grapes and grilled chicken, so my kids gobbled it up, too!  I actually went back for seconds, but it’s ok, because it is low cal. :)

I served my on top of a piece of whole wheat toast, but it would be great with your favorite cracker, on a roll, or just on its own.  Click For Printable

My New Year’s Resolution was to cut calories, so I’m discovering new ways to tweak recipes in my repertoire.  The recipe I tweaked this time was a family favorite – French Bread Pizza.  While on the bread aisle, I saw Sandwich Rounds, and immediately thought of thin crust pizzas!  I guess I must have really been craving pizza for me to think pizza when I saw Sandwich Rounds, instead of …sandwiches.

This is a great one to get your kids in the kitchen to help you out with!  My baby girl had the best time helping Mama.  She’s a pro at sprinkling cheese!

The great thing about these pizzas is you can use what you have on hand to make a delicious pizza!  I had some deli ham on hand, so that’s what we used this time. [Read more...]

This week has been a hectic week with little rest.  I can’t even tell that we had two days off from school for President’s Day and Mardi Gras.  In actuality, I only did 2 regular week activities out of my bajillion that I typically do because the family received some news that put everything else on hold.

One of the 2 regular week activities that I did get done was a cake for Friday.  I had to work fast on this one because we had to be on the road to join the rest of our family in a matter of hours.  Thankfully everything worked out great, and look how cute it turned out!  This was a great idea that my client had for a baby shower cake – a onesie!  And not just any onesie, this baby is going to be stylish wearing zebra print.

How Fast They Grow

I was just looking through some pictures I have on my personal Facebook page, and I realized I have such mixed emotions about how much my babies have grown!  I’m proud and excited for them to be growing up, learning, discovering.  But…I’m also a little sad, nostalgic seeing how little and babyish they were.  My BABY will be 3 in a month!  Seems like I just had her and moved back to my hometown and searched for our first home, and all that fun stuff we did when Peamite Bravo first arrived in the world.

Just look how much Peamite Alpha and Peamite Bravo have grown Christmas to Chritmas!

Happy Valentine’s Day to my readers!  Hope this day has been filled with love for each of you. I wanted to share a verse about where love comes from before I told you about my Valentine’s Day.

Eggs in Ham Cups

Eggs in Ham Cups

I discovered this recipe in my Cooking Light Fresh Food Superfast cookbook.  (Highly recommend the Cooking Light cookbooks…I also have Cooking Light Comfort Meals and it has a lot of great recipes, too!)

I tweaked the recipe to make it to my liking.  After all, that’s how cooking should be – not being confined to a recipe, but adapting to make it the way you enjoy it!

I’m not a fan of egg yolk, unless scrambled, so I made these with egg whites only.  I did try making them with scrambled eggs, and they were good that way…puffed up like a souffle…but I like the texture of egg whites only the best.

Play around with this recipe to make it your own!  How about a Southwest version by adding a little salsa to each?  Ooo…I think I’ll try it that way next.

Don’t Just Talk About It!

When I saw this, I thought, how true.  I’ve had a bad attitude about a couple of things in particular happening lately, and boy, has my husband heard about it.  But, I never told The Man Upstairs about it.  I finally humbled myself before Him tonight and I’m going to let Him handle it.  Why I ever think I can handle something alone is beyond me….human nature?
