The sweet and spicy flavor combination is one of my favorites. It’s probably why I like Chinese food come to think of it…
I had a hankering for some sweet and spicy chicken, so I brainstormed to come up with a quick fix. Since I have to pick Carter up right in the middle of the time I would normally prepare lunch, I try to do what I can before I have to leave. Then as soon as I get back, I can get it cooked so it’s hot and ready for table when David comes home on his lunch break.
Since this concoction came about on one of those days, I cut the chicken into cubes and placed in a gallon freezer bag. I added the honey and spices, sealed up the bag, and then squished everything around to make sure each piece of chicken was well coated.
It’s time to go get Peamite Alpha! So, I place the bag in the fridge and go on my way.
When I get back, I preheat the oven to 375 degrees and spread the chicken out on an aluminum foil lined baking sheet.
While the chicken is cooking, I hear David on the phone saying he’ll be back to work in 15 – 20 minutes.
I think, “Wait! No! Lunch isn’t ready, yet! You can’t leave!”
He has to get back to work, so once everything is ready, I pack it up so he can take it to work with him.
I find out later that he was “skeptical” of my hot honey chicken bites…
“But they were really good! I shouldn’t doubt you in the subject of food. You’d think I would have learned that by now!” (we’ve been together for a total of 10 years)
At first I was a little offended that he was “skeptical” of my delicious chicken, but then I realized, he did at least try it, and ended up loving it.
And of course, you don’t have to cut your chicken up, or marinate it in the fridge. You could easily just coat the chicken and bake or grill until your heart’s content.
This is how I made it this time…although if you like it hotter, add more heat!
Hot Honey Chicken Bites
Prep Time: 10 minutes Cook Time: 15 – 20 minutes Serves: 4
- 1 pound chicken breasts, cubed
- 1/4 cup honey
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/4 teaspoon ground red pepper
Preheat oven to 375 degrees. Cut the chicken into cubes and place in a gallon size freezer bag. Add the rest of the ingredients and seal the bag closed. Toss/squish the bag around making sure each piece of chicken is well coated with honey and spices.
Line a baking sheet with aluminum foil for easy clean up. Place the chicken bites on the baking sheet and bake for 15 to 20 minutes until the chicken is cooked through.
