Jedi Recipes (Recipes on the Light Side)

These are some recipes that I’ve made lately that are way better for you than what I would have typically eaten a few months ago.  I got pretty lazy about taking care of myself, and it shows.  I’m getting back on track, and it’s for a host of reasons.  If I’m going to be completely honest, reason #1 is for vanity reasons and not health, but health comes in a close second…especially since high blood pressure runs in the family.  Reason #3 ties in with #1…my sister-in-law is getting married, and I’d rather not be the fat bridesmaid….especially since I’ll be standing next to all these skinny people.

So, here are some recipes that are on the Light Side, which I figure makes them Jedis since they’re not on the Dark Side…  I’m dork.  I know.

I tried this one a couple of months ago as my introduction to butternut squash.  I really enjoyed it.  Perfect for a cool night sipping from a mug.

This next recipe I tried was a Pinterest find.   I love the squash family, whereas my husband doesn’t.  Lucky for me, my friend, Stephanie, provided some zucchini for our consumption.  They were so awesome.  Just thinking about them makes me want to eat some now.

I’ve posted about this next one before.  For a quick and delicious salad, Grilled Chicken on Fruity Spinach Salad is a winner.  I love to use my George Foreman grill because it cooks twice as fast and it’s inside.  That’s a plus when you have dog that tries to eat any and everything you may have.   When you procrastinate starting dinner like I do quite often, having a quick fix is answer.

One of my favorite parts of this salad is the homemade Strawberry Vinaigrette.  You could play around with the basic method to make whatever flavor you enjoy most.  I just happen to really like strawberries.
