Have you seen or tried these, yet? Such a cinch to make! A regular boxed cake mix and a quart of ice cream worked out great for waffle to ice cream ratio.
The beauty is, your cake waffle can be whatever flavor your heart desires. I’m a chocolate kind of gal, but more importantly, these were for my mom’s birthday, and she is a chocolate kind of gal.
I set my waffle iron to the second to highest setting, and cooked them until my indicator light turned green (they’re done!). If your waffle iron doesn’t have an indicator light, it took about 3 minutes to cook each waffle.
Once the waffles cooled (on a wire rack) I broke them apart and started placing ice cream in the center of each section. To make sure all the nooks and crannies were filled with ice cream, I squished the top waffle down on top. This pushed the ice cream out to the edges, and up into the crevices of the waffle.
The ice cream was getting really soft towards the end, so I popped them in the freezer as I made them, and left them there until ready to serve.

Waffle Ice Cream Sandwiches
Cook/Assembly Time: 30 minutes Serves: 15 – 20
- Boxed Cake Mix (any flavor) prepared per box directions
- 1 quart of ice cream (any flavor)
Prepare the cake mix according to the box’s directions. Spoon mixture on to pre-heated waffle iron and cook about 3 minutes or until indicator light changes. Cool the waffles on a wire rack. Separate the waffles into quarters and fill with desired amount of ice cream in the center. Press another waffle on top, squishing the ice cream out to the edges. Store in the freezer, covered, until ready to serve.
For festive ice cream sandwiches, dip the edges of the ice cream into sprinkles!
